Butter Beans

Ingredients

  • 1 lb. dry butter beans (lima beans are almost the same)
  • 1 lb. Smoked Sausage or Andouille
  • 1 minced clove garlic
  • 4 cubes beef bullion
  • 1 chopped or minced onion
  • 1 chopped or minced bell pepper
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper (your choice)
  • 1.5 quarts water

Note:
For those not in the know, butter beans are very similar to lima beans. They're about the same, but you can use Limas if you don't know what butter beans are. Just don't ues baby limas. This can be served as a cheap and easy side dish. You don't have to throw in the sausage, onion, or bell pepper if you don't have it on hand or are going for cheap. Also, You can switch the beef bullion and the andouille sausage for cubes of cooked chicken and chicken bullion. Entirely your choice.

Note:
If you don't have a crock pot, you can boil the beans (covered) for about 45 minutes to 1 hour, until they are soft but not mush, and let them simmer for about 30 minutes. Then add your ingredients and let simmer for another 30 minutes.


Directions

1) In a crock pot on medium-high, add the water, start dissolving the bullion and add your butter beans.

2) Mince the garlic finely, mince the onions and green peppers, slice the sausage, and add it all to the crock.

3) Add your spices to taste, and let it cook for about 10-15 minutes.
