Beignets

Ingredients
- 3/4 cup water
- 1 envelope (active) dry yeast
- 1/2 cup evaporated milk
- 1/8 cup shortening
- 1 beaten egg
- 3 cups flour
- 2 tbsp baking powder
- 1 tsp salt
- 2 tsp sugar
- frying oil
- Topping of your choice (melted chocolate, cherry pie filling, blueberry, etc.)
Note:
As the last ingredient says, you can use a variety of things
as toppings. Some of the most popular are cherry pie filling
and/or melted chocolate. You can either drizzle the topping
over the beignets or lay it out for dipping. Your choice.
Directions
1) Boil your water and add in yeast and sugar in a bowl, mix, and let
stand until frothy (about 5 minutes).
2) Add your salt, egg, evaporated milk, and a teaspoon of oil.
Cut the shortening into roughly half the flour. Slowly add the
remaining flour as you mix. Once the entire concoction is mixed,
cover with a towel or seran wrap and place in your refrigerator
overnight to rise.
3) Flour a spot so the dough doesn't stick, work it out and roll it
out. Now cut the dough into rectangles 2" long max, and cut each
rectangle into two triangles.
4) Flour a baking sheet and let the dough rise someplace warm.
A sunny window or a very lightly heated oven does. Around Bluescentric,
we heat an oven and place the tray on top of the burners (with
the burners off!) This should take roughly 5 minutes or less.
5) Prepare a paper plate or lay out a plate covered with a paper
towel or napkin to soak up any excess grease. Heat about 2 inches
of oil to meduim heat and fry a few beignets at a time. Don't
overlap them; beignets need personal space. They will fry quickly,
usually within seconds. Once A beignet is lightly golden brown,
remove it and set it on the plate.
6) When all Beignets are done, coat the top with your desired
amount of confectioner's candy (sometimes called powdered sugar,
whatever you want to call it.)
7) Serve with your topping and ENJOY.
